I know I owe you all a whole bunch of recipes ... and will do it.  Meanwhile, I want to share with you an Easy, Tasty & Satisfying, Healthy, Colorful Dinner we had the other night.     What's great about this meal is it can all be prepared ahead of time.  But the "apparent complexity" of it will satisfy tastebuds and impress the guests.  Kinda a more sophisticated approach to the typical "cold plate"...

Folks have often asked us - my hubby, Peter and I - about our "menu and meal planning".  Peter (aka "Chef Pierre") and I have found it's the only way to deal with crazy schedules and ensure that we eat (somewhat) regularly and healthily, stay on budget, and provide our palates with variety.  Let's face it ... every night out or eating take-in gets old ... as does cooking and eating the same home-cooked meals...
